Tangy Edemame with Cranberry, Feta and Capers


  • 3 cups edamame beans
  • 8 ounces dried cranberries
  • Juice of one large lime
  • 1 tsp olive oil
  • 1 Tbsp capers
  • 4 ounces reduced fat feta cheese


  1. Mix all bu the feta together and chill for at least two hours. 

    Remove from fridge and allow to sit for 5 minutes. Add the feta just before serving
