A fresh holiday pasta salad that stretches from the holidays and beyond. Using gluten free Tres Omega pasta makes this one tasty side dish.

Ok, so the holidays are nearly over, but why not keep the festivities going with more delicious and festive food? For me, cranberries are a big part of holiday recipes. I love making my Cranberry Sauce or even a Cranberry Bundt Cake. So why not a pasta salad?
Fresh foods are important. Fresh tasting foods even better. Since fresh cranberries are not always in season, using the dried version gives this holiday pasta salad a little sweet, a little tart and all around goodness.

Paried with pasta, it’s even better. I’ve been working to eat healthier and that’s where Tres Omega Gluten Free Pasta comes into play. Many peple I know think gluten free means flavor free, but that’s not the case here. Tres Omega Gluten Free Penne Pasta was just perfect for this pasta salad and there was no shortage of flavor here.


Holiday Pasta Salad With Cranberry
Ingredients
- 8 ounces bagged broccoli slaw
- 6 ounces Tres Omega Penne Pasta cooked according to package directions
- 1/2 – 3/4 cup honey dijon dressing divided
- 1/4 cup dried cranberries
- salt and pepper to taste
Instructions

Combine the slaw, pasta and half the dressing in a bowl. Chill for 2 hours

Add remaining dressing just before serving. Add the salt and pepper. Stir. Top with the cranberries
Recipe Notes
Add more or less of the dressing depending on how “saucy” you want it.
I made this to go with some salmon since I thought the fresh flavors of my holiday pasta salad would go great with a seasoned, and slightly spicy, fresh fish.
