Since it’s near summer and I just planted two zucchini plants, I know what’s coming… lots of squash! This recipe is quick and easy for making a quick snack or side dish to your grilled proteins. The Mealthy CrispLid made this possible in less than 20 minutes.
Air Fryer Spicy Zucchini Sticks
- 2 medium zucchini cut in half and sliced into "sticks"
- 1 Tbsp olive oil
- 1 Tbsp grated parmesan cheese
- 1-2 Tbsp Italian Style Breadcrumbs
- 1-2 tsp Mrs. Dash Jalapeno Seasoning more if you want additional spice

Place zucchini sticks into a bowl. Add olive oil, cheese, breadcrumbs and Mrs. Dash. Toss to coat.
Place the CrispLid trivet in the inner steel pot of the MultiPot (or Instant Pot). Place the CrispLid Basket on top.
Spray the CrispLid basket with cooking spray and add the zucchini.
Spritz the zucchini with a couple of sprays of cooking spray.
Place the CrispLid on top and plug it in. The MultiPot/Instant Pot should be UNPLUGGED.
Set the temp to 400 degrees and the cook time to 10 minutes. Hit the start button. The CrispLid will beep when it's done.
Unplug the CrispLid and remove it by the handle and place the lid on the silicone trivet. Be careful as the lid is VERY HOT.
Serve the zucchini with your favorite dipping sauce.
I’m so excited to make more recipes and not just air fryer ones. The cool thing here is the Mealthy CrispLid will crisp/broil the recipes you already make in your pressure cooker. Meaning…… no transferring it to another oven-safe dish or tray (yay, no extra dishes!) or turning on the oven/broiler (and heating up your kitchen on sweltering summer days) to give you that crunchy top you love with mac n cheese or potatoes.
