Easy and pretty oven roasted carrots for your busy weeknight dinner. Colorful, tasty and so simple to make so dinner is on the table fast.

Just because they are carrots does not mean they have to be a boring side dish. Use crinkle cut pre-sliced carrots like I did and serve it in a uniquely shaped white serving bowl and you have “fancy-schmancy” on a typical weeknight.
Ever since I’ve been a kid I’ve been a carrot fan. Most kids I knew hated them and I didn’t understand why. As I’ve gotten older, I’ve learned of the many health benefits of these orange goodies and now I know why mom kept pushing them on us.
I thought oven roasted carrots instead of sautéed or steamed would be perfect. In fact, it was even easier than I thought. Just add your favorite seasoning and your side dish is ready quick.

Oven Roasted Carrots
One of the easiest side dish recipes hands down.
Ingredients
- 1 oz bag carrot chips
- 1 Tbsp Olive Oil
- Salt & Pepper to taste
- 2 tsp fresh squeezed lemon juice
- 1 tsp garlic powder
- cooking spray
Instructions

Pre-heat oven to 350 degrees

Toss the carrot chips with the remaining ingredients. Use cooking spray to lightly spray cookie sheet

Bake for 15 minutes in pre-heated oven

Here are some tips when searching for the perfect bagged carrots.
- Make sure the orange is bright.
- Look at the center of the chip. Is it brown? Discolored? A bit green? If so, pass it by.
- Make sure the bag has been sealed tight to ensure freshness
