Vegan Lemon Garlic Pasta with Spinach
Ingredients
- 2 Tbsp Extra Virgin Olive Oil
- 8 ounces white button mushrooms
- 1 bunch fresh spinach stems removed
- 2 large cloves garlic minced
- 2 whole lemons juiced
- 1/4 cup vegetable broth
- 1 package Barilla Red Lentil Rotini Pasta cooked according to package directions
Instructions

In a large skillet over medium heat, add the extra virgin olive oil. Heat through. Ad the mushrooms, spinach and garlic. Cook until spinach wilts.

Add the lemon juice and broth. Cook for about 5 minutes or so until mushrooms are cooked through.

Add the cooked pasta to the skillet and stir to coat. Serve immediately. Enjoy!
