Easy Weeknight Lemon Garlic Pasta with Spinach

Have you tried vegan pasta? I had not until I made this Lemon Garlic Pasta dish with Barilla Red Lentil Penne Pasta. And how was it? Exquisite… tasty… nutritious and down right a dish I would make again.

Previous experience with vegan pasta led me to believe all vegan pastas were the same: poor taste and/or texture, questionable ingredients and more.

BUT… Barilla has fixed this issue for good by creating two delicious legume based pastas; Red Lentil and Chickpea.

The beauty of these pastas is they are make from one simple ingredient and have superior taste and texture vs. the pastas I’ve tried in the past.

You’re probably wondering how it cooks up in recipes. Glad you asked! I used the Red Lentil variety to make a simple classic lemon garlic pasta that is easy enough for those busy weekenights yet elegant enough for a date night at home.

Vegan Lemon Garlic Pasta with Spinach

Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 8 ounces white button mushrooms
  • 1 bunch fresh spinach stems removed
  • 2 large cloves garlic minced
  • 2 whole lemons juiced
  • 1/4 cup vegetable broth
  • 1 package Barilla Red Lentil Rotini Pasta cooked according to package directions

Instructions

  1. In a large skillet over medium heat, add the extra virgin olive oil. Heat through. Ad the mushrooms, spinach and garlic. Cook until spinach wilts. 

  2. Add the lemon juice and broth. Cook for about 5 minutes or so until mushrooms are cooked through. 

  3. Add the cooked pasta to the skillet and stir to coat. Serve immediately. Enjoy!

    Trying this today, but with broccoli instead of spinach. I cannot see the approximate calorie count for this dish. Am I missing something?
