Who doesn’t love a good piping hot bowl of chicken noodle soup? I know it’s a favorite among my family, especially when the temps dip. It’s also a fave when I’m not feeling my best self. I think there is something to be said about it. This recipe is made low and slow in my Cuisinart Slow Cooker and is totally amazing.
My step dad made the best honmemade from scratch chicken noodle soup. It was incredible. Perfectly seasoned and full of chunky chicken, carrots and other fresh veggies. Sadly he passed away and took the recipe with him (along with his mac and cheese recipe).
I’ve been trying to duplicate the recipe ever since. My mom remembers some of it but since he was the cook in the house, she didn’t pay that much attention to his ingredients or recipe steps. Bummer for me since I want to make it.
This chicken noodle soup recipe is about as close as I have gotten. I didn’t put as many noodles in it as he did and I added some chunks of potato as well. Plus, I shredded my chicken rather than cut it into chunks which put my own spin on it.
Shredding is easy if you use your KitchenAid Stand Mixer or even a Hand Mixer. How is that possible you ask? Well, just cook up the chicken first, then put it in the Stand Mixer bowl. Using the mixer blade, turn your mixer on speed 3 (or 4) and let ‘er rip for about a minute. Voila… shredded chicken!
The hand mixer is just as effective. Since I don’t have one, I can’t tell you which setting, but a medium speed will do the trick.
Slow Cooker Shredded Chicken Noodle Soup
Like step-dad used to make! Try this slow cooker chicken noodle soup for those cold winter days when nothing is more satisfying than comfort food.
- cooking spray
- 1 Tbsp butter
- 1 large red onion chopped
- 4-6 large carrots chopped
- 1-2 garlic cloves chopped
- 4 large boneless, skinless chicken breasts
- 1 tsp oregano fresh or dried
- 1 tsp thyme fresh or dried
- 6-8 cups fat free low sodium chicken broth
- 2 medium red potatoes diced
- 1-2 cups dried pasta of choice
In a large skillet (or Cuisinart 3-in-1 slow cooker if you have one), heat to medium heat. Spritz with cooking spray and add butter. Add chopped onion, carrots and garlic. Cook until translucent.
Transfer onion mix to slow cooker and spread out. lay the chicken breasts along the top. Cook on high for 2-3 hours (cooking times/heat vary). Remove chicken and place in the mixer bowl, turn the mixer on and shred for 2-3 minutes to desired size.
Place the shredded chicken back into the slow cooker. Add all the remaining ingredients except for the pasta. Cook on low for 1-2 hours (cooking times/heat vary)
Add the pasta. Cook for another 30 minutes on low until pasta is to desired tenderness. Serve and enjoy!
