I’m fortunate enough to have my in-laws here from Colorado to celebrate with. Holidays are traditionally spent with family and friends so I am so grateful they are here! IT’s the first time they’ve been out to Utah since before hubby and I got married so naturally we wanted it to be special. That includes sightseeing and of course FOOD! Enter Montchevre goat cheese to my ingredients list.

Holiday Omelet with a Kick
Jalapeno Goat Cheese & Veggie Omelet
- 4 large Eggs beaten
- 1 cup fresh spinach chopped
- 5-6 medium white button mushrooms sliced
- 5-6 large cherry tomatoes sliced
- 2 oz Montchevre Jalapeno Goat Cheese crumbled
- sliced jalapeno & sour cream for garnish
Heat a small skillet over medium heat. Add the spinach to the beaten eggs and combine.
Spray the skillet with non-stick cooking spray. Pour the eggs into the skillet in a thin layer. Swirl the eggs around the pan to thin out the layer. It should look like a large egg/spinach pancake. Allow the eggs to set around the edges and being to set in the middle.
Using a large spatula, carefully flip the eggs (it should still look like an egg pancake). Cook the eggs about 1-2 minutes longer.
Lay half the veggies and cheese on half the eggs, then fold the other half over the top.
Carefully slide the omelet onto a plate. Garnish with jalapeno and sour cream.
Fresh, flavorful with just enough heat from the jalapeno to make your tastebuds sit up and take notice, this is a holiday omelet that will stretch beyond the holidays and into your regular breakfast recipe rotation.
