Can you believe it’s fall? With the cooler temps and all-things-pumpkin spice right here, it’s time to freshen up some recipes. Comfort food comes to mind in fall, but I don’t always want to weigh myself down. Salmon is a favorite during any season and this Stuffed Salmon made with BLENDABELLA Rustic Tuscan was just the ticket for a light fall dinner.

Recently BLENDABELLA invited me to participate in their Blogger Recipe Challenge.I received free samples of their Zesty Mexican, Coconut Thai and Rustic Tuscan blends to use in creating an inspired dish worthy of a king. OK, they didn’t say THAT, but that’s what I was going for.
BLENDABELLA starts with fresh delicious mushrooms, which is a favorite ingredient I use all the time. Mushrooms are world renowned for their nutritional benefits. Fresh portabella mushrooms are naturally low in calories, fat free, low in sodium and cholesterol free while being rich in nutrients including Vitamin B-3 and the antioxidant Selenium.
Since we eat salmon all the time, I just knew BLENDABELLA would be a perfect compliment to this favorite fish. I used the Rustic Tuscan blend for this recipe and I think it paired well with salmon and probably any fish you can think of.
Stove-Top Rustic Tuscan Stuffed Salmon
- 2 6-8 oz salmon steaks
- 4 Tbsp BLENDABELLA Rustic Tuscan Blend
- 10 oz vegetables of choice I used spiralized carrots
- 2 tsp Mrs. Dash Italian Seasoning
Heat a large skillet over medium-high heat. Cut a slit into the salmon steaks being careful not to cut all the way through
Add half of the BLENDABELLA into each slit. Wrap each salmon steak with foil, not too tight.
Spray the heated skillet with cooking spray. Lay the veggies out in the skillet in an even layer, arranging so there is open space for the salmon. Place the salmon in the skillet.
Cover and cook on medium high for 5 minutes. Reduce heat to medium low and cook another 15 minutes. Adjust your stovetop heat as necessary since all stoves cook differently.
To serve, arrange the veggies on a plate and place the fish either on top or just to the side. Enjoy the deliciousness.
