It’s Crazy Ingredient Challenge time!
What’s the Crazy Ingredient Challenge? It’s two ingredients voted on and chosen to use in a new creative recipe. This month included two delicious ingredients to make up a scrumptious summer dish. I love this one since it’s a great side dish for burgers, chicken or fish.

And sadly, this is our last Crazy Ingredient Challenge (insert tears here). I’ve loved this challenge however life got in the way and our group decided to discontinue.
In honor of this being our last challenge, I wanted to link up my top three favorites I have made with during these past few years. In no particular order they are:
Mocha Latte Ice Cream with Cashews – The ingredients for this one were Coffee & Cashews. I’ve made this several times since the challenge August of 2015.
Sweet Potato and Black Bean Burger with Roasted Jalapeño – The ingredients for the November 2015 challenge were sweet potatoes and jalapeños. I wanted a big juicy burger and this vegetarian version was quite delicious.
Peach Mango Salsa with Pineapple and Corn – The challenge from July 2016 was a favorite since the ingredients of peaches and corn were perfect for a summer challenge.
This new recipe is perfect for summer. Using fresh lime and tangy capers, it’s the perfect chilled side dish. Here’s a tip to get the most juice from your lime: roll it on the counter a few times giving gentle pressure. It helps release the juices. Once juiced, put the rest of the lime in your disposal to freshen it up.
Tangy Edemame with Cranberry, Feta and Capers
Ingredients
- 3 cups edamame beans
- 8 ounces dried cranberries
- Juice of one large lime
- 1 tsp olive oil
- 1 Tbsp capers
- 4 ounces reduced fat feta cheese
Instructions

Mix all bu the feta together and chill for at least two hours.
Remove from fridge and allow to sit for 5 minutes. Add the feta just before serving
I’m going to miss this challenge. I’ve met some wonderful bloggers during our tenure and also challenged my brain to come up with some unique recipes. It’s been a great journey and I wish my fellow bloggers well.
