Slow Cooker Pork Country Ribs with Peppers is a easy dinner when you're pressed for time. Pop it in the slow cooker, set it and forget it. It's cooked in apple juice for tender goodness.

Slow Cooker Pork Ribs, Country Style

Slow cooker all the way! Simmered in apple juice, onion and peppers for an amazing taste.

Ingredients

  • 1/2 large red onion diced
  • 1 med yellow pepper cut into matchstick strips
  • 1 med orange pepper cut into matchstick strips
  • 2 tabs Pop N Cook Garlic
  • 1/2- 1 pounds boneless country style pork ribs
  • Salt and pepper to taste
  • 2 cups apple juice

Instructions

  1. Heat a non stick skillet over medium heat or use the browning feature on the slow cooker. Spray with cooking spray 

  2. Add the diced onions. Cook until fragrant

  3. Season the pork ribs with salt and pepper. Move the onions to the side and add the ribs. Sear on each side about 3 minutes each. Add the garlic

  4. If using a skillet, add the ribs and onions to the slow cooker. Add the peppers on each side of the ribs. Then, pour the apple juice over the ribs and peppers.

  5. Turn the slow cooker to high for two hours.  Always use a meat thermometer to insure the pork is completely cooked

Keep in mind all slow cookers are different. Mine took two hours since it not only cooks quick, but I have a large slow cooker and I did  not crowd the cooker. Be sure to adjust your cooking time if you use more meat.

Here’s a trick for dicing onions…. First, slice it in half, right down the middle between the two ends. Then, slice it again starting at the root end.  To make dicing easy, slice little slivers into the onion toward the core, but don’t cut all the way through. It fans out as you can see here.

Then, cut across the slivers and you have beautiful little diced onion pieces. I find this to be the easiest way, not only because it’s quick but it makes fairly uniform cuts. Plus being quick means less watery eyes.

There you have it! Slow cooker pork ribs waiting for you to devour. I served it over rice but you can also have it with a salad for a lighter dinner. Either way, it works.
