What is that you ask? It’s two ingredients voted on and chosen to use in a new creative recipe. This month I so left this to the last minute….. we’re talking last night. Nothing like waiting until the deadline right? Well, with this delicious dish, what were our ingredients? Read on…………
May’s Crazy Ingredient Challenge ingredients were Apple Juice and Bell Pepper.
No one said which color pepper…. So I opted for a rainbow of peppery goodness. Why go green when there are so many options?
This combo was one of the easier one’s we have come up with. Sometimes they’re odd like Avocado and Caramel. Sometimes they can be way weird with Grapefruit and Wasabi. Sometimes they’e super easy like Lemon and Thyme and sometimes they’re right in the middle like with this month. Regardless, I love this challenge since it forces me to exercise my brain.
I went slow cooker all the way…….. Winter or spring, my slow cooker gets a workout. It’s perfect for chicken, soup and this recipe. Starting with onion, garlic and country style pork ribs and adding the two ingredients it’s a winner of a dinner.
My slow cooker is a Cuisinart 3-in-1, which means it can steam, slow cook and brown. I just adore the browning feature since I don’t have to use an extra pan which means I don’t have a lot to clean up.
Whipping up this slow cooker pork was quite simple. It’s not a 30-minute recipe by any means, but it’s one you can start earlier in the afternoon for a delicious diner.
