Spiralized Zucchini and Carrots with Garlic and Basil

Here is a simple tasty side dish with spiralized zucchini and carrots. If you’re short on time, this side dish will be the perfect quick & easy recipe.

One of my favorite veggies is zucchini. It’s been a favorite since I was a child. My mom used to slice them up and steam them with saltine crackers. I know that wounds weird, but it was an all time favorite as a child.  I still eat zucchini as often as I can and grow it in my garden when the season is upon us. This recipe is an easy one since I also added Trader Joe’s frozen spiralized carrots. with onions and some seasoning, this one goes from stove to table in no time.

We had a family dinner the other weekend and since it was one of the first warm days of the year, we decided to grill burgers and dogs. How nice that was! It was in the high 60’s so it felt great to breathe in the fresh air while cooking. This recipe was perfect to accompany those grilled goodies.

Since it was such a nice spring day, my niece put together a very pretty spring table with lovely napkin rings. Isn’t this gorgeous?

And these beautiful rings are from Pier One Imports, but you can similar items on Amazon as well. It’s just so pretty and springtime festive!

Spiralized Zucchini and Carrots with Basil

Here is a super easy veggie side dish that I bring to parties often 

Course Side Dish
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 6

Ingredients

  • 2 Tbsp olive oil
  • 2 pods Pop and Cook garlic
  • 2 pods Pop and Cook Basil
  • 1/2 med red onion sliced thin into half moons
  • 3 medium zucchini
  • 1 package Trader Joe's Frozen Spiralized Carrots thawed
  • 2 tsp Italian Seasoning

Instructions

  1. Spiralize the carrots using a spiralizer (counter top, handheld or as an attachment to your mixer)

  2. In a large skillet, add the olive oil and heat over medium heat. Add the basil and garlic. Cook until they all melt. 

  3. Add the onions and cook, over medium heat until translucent. 

  4. Add the carrots and zucchini. Sprinkle the top with the Italian Seasoning. Stir. Cover and reduce heat to low. Cook for 10 minutes until carrots are tender-crisp.
