Super Easy Asian Meatballs that can be cooked up small for appetizers or larger as part of a meal with rice and veggies.
I love it when a recipe is easy. And simple. So these Asian Meatballs are just the ticket. Make ’em small for appetizers or beef them up a bit for rice or noodles. Either way, you’ll love them!
I’ve really been into meatballs lately. I’m not sure why…. maybe it’s because they are so simple to make. I’ve made beef, chicken and turkey varieties and mostly put them in some tomato sauce over noodles or zoodles. Simple, right?
But after visiting Zao Asian Cafe, I wanted to make them Asian style. Zao is a local Utah Asian restaurant. Think Barbacoa or Cafe Rio with an Asian twist. They make some delicious meatballs they put in tacos, soups and in a rice bowl. Why not try that too?
Here is the super easy recipe I made:

1 pound Ground Beef or Turkey
- 2 Tablespoons breadcrumbs or panko crumbs
- 2 teaspoon chopped ginger

2 cloves garlic, crushed

1 large egg, beaten
- 1 Tablespoon plum sauce
- 1 teaspoon sesame oil
- 2 medium carrots, sliced
- 5-6 leaves leafy greens, such as bok choy or kale

1 cup instant white rice, cooked according to package directions
- Soy sauce for taste
Add the first six ingredients to a bowl season with salt and pepper. Mix until just combined. Using your hands, form the mixture into equal-sized meatballs.
In a large skillet, add tablespoon of olive oil on medium until hot. Add the meatballs; and cook, gently stirring occasionally , 4 to 6 minutes, or until browned on all sides. Add the carrots and a 1/4 cup of water or broth. Cook, stirring occasionally until carrots soften a bit, about 6-8 minutes. Cook longer if you want softer carrots.
Add the greens, cover and cook 2 more minutes until greens are wilted.
Serve over rice and add soy sauce (if desired) to taste. Enjoy!!
