Sausage Sweet Potatoes with Eggs over Spinach

Ingredients
- 1 cup diced sweet potatoes (pre-cooked)
- 4 chicken maple sausage links
- 4 Large eggs
- 1 teaspoon ground cinnamon ((or more if you love it))
- 2 cups fresh spinach (rinsed)
Note
Don't have sweet potatoes? Use what ever is in the fridge! Chopped baked potato, broccoli, zucchini... whatever you want!
Directions
Step 1 | |
In a large saucepan over medium heat, add a couple of spritzes of cooking spray. Add the potatoes and sausage. Cook until sausage is cooked through. If the pan gets dry, spritz a bit more cooking spray in there. | |
Step 2 | |
Move the veggies and sausage over to one side of the pan and cook the eggs according to the way you like it. I made mine over easy. | |
Step 3 | |
Once cooked, bring out two plates and divide the spinach. Lay an equal amount of the veggie mix on top of the spinach and top with an equal amount of the eggs. Enjoy!! |

As you can see, just a few ingreiennts make this an amazing sweet potatoes and eggs breakfast. I had some roasted sweet potatoes left over from the other night, so it was a perfect addition. You can use whatever you want! That’s the beauty of this recipe.
