Easy one skillet 30 minute tilapia cooked with fresh carrots and spinach. Paired with green lentils, this is an easy healthy dinner for two.
You would think that after the holidays things will calm down but now. Seems like things for me got just a little crazier. I work for a bank and we have lots of year end stuff coming up as well as external auditors coming for a visit for two weeks. TWO WEEKS! So easy dinners are a must and this 30 minute tilapia was easy AND tasty.
When life gets busy like this, I just want to sit down and chill and do absolutely nothing. Or order takeout. But, one of my goals this year is to eat healthier so I can slim down a bit. Pretty much everyone’s goals this year right? So I made this recipe the other night that was so simple it was unbelievable. For the most part it was one skillet. At least for the main dish anyway.
This recipe has a three main ingredients aside from the spices. One of my favorite easy seasoning are the Pop and Cook onions and garlic I used to make chicken skewers last summer. Pop and cook is located in the freezer section of Walmart by the frozen veggies and they look like little ice trays of goodness.
They’re easy. Just pop what you want out of the tray and sauté it with your meats or veggies. Easy peasy right? For this dish I use both of garlic and onion varieties. I have found since I was given this product to review, I use it quite often and it’s very convenient when you don’t have time to chop.
