Utah weather is fickle. One day sunny and warm, next it’s cold and rainy. There’s a saying here “If you don’t like the weather, wait 5 minutes.” And boy is that the truth! Last week as I was heading home after a play in Downtown Salt Lake, it was 62 degrees and breezy. At 9;30PM! Within 18 hours, it was 40 degrees, rainy and COLD! Perfect weather for udon noodle soup.
And not just any soup would do. I wanted something warm, hearty and comforting. Udon soup is a favorite and Fortune Udon is just what the doctor ordered. The savory broth and those thick udon noodles are just perfect for the chilly winter temps.
It gets soooo chilly here! As a California girl, I was so not ready for the Utah winters, but as time has gone by I’ve been growing accustomed to it. The key is to warm yourself from the inside and that’s where soup comes in.
Fortune Udon comes in three flavors: Original, Chicken and Mushroom. They are super easy to make in the microwave so you’ll have a hot meal fast whether you are at home or at the office. Each package is two servings which is perfect to pair with a salad for lunch. For this udon noodle soup recipe, it was our main dish so I used two packages for two people.
Udon Noodle Soup Ingredients
1 Tablespoon butter
8 medium white button mushrooms, sliced
1/2 cup sliced leeks
4 ounces large shrimp, peeled and deveined
1 green onion, sliced (separate the white and green parts)
2 packages Fortune Udon, Mushroom Flavor
Won Ton Strips for Garnish
In a medium skillet, heat the butter over medium heat until melted. Add the mushrooms, leeks and the white parts of the green onion. Cook until mushrooms soften.
Add the shrimp to the pan and cook until pink.
White shrimp is cooking, cook the noodles in the microwave according to package directions (3 minutes with 2-3 cups water per package, seasoning packets and noodles.).
To serve: Split the noodles and broth to two separate bowls. Top each with half the shrimp mix. Garnish with green onion slices and won ton strips.
