Super delicious shredded chicken chili that is perfect for fall, game day or party entertaining.
I made a vegetarian chili last month that was mouthwatering, drool-worthy incredible. Hubby loved it, but being the carnivore he is, he really missed the meat. So I whipped up a fairly easy shredded chicken chili that was not that hard at all thanks to my KitchenAid mixer.
I’ve been in love with my KitchenAid mixer since the moment I got it. It has made mixing a breeze which helps me with my arthritis in my hands. Having arthritis makes it a bit painful to mix up those thicker batters for corn bread as well as doing the kneading for me when I make breads. I read somewhere that it would make shredding meats a breeze but I never tried it until now.
I precooked my chicken in the slow cooker with some chili powder, taco seasoning and a bit of salt and pepper. Now, I used four large chicken breasts since this chili was to feed a crowd. I cut the breasts into four pieces before cooking too so it would take less time. Once done, I popped them in the bowl of my stand mixer (minus any juice that was left) and using the flat beater head, turned it onto speed 3 and less than 3 minutes later, I had shredded chicken.
No lie. Too bad I didn’t get a picture/video of it. You’d be floored over how fast and easy it was. One thing to note: put a towel or something over your mixer and bowl. With the juice from the chicken (and you can’t eliminate all of it when it goes in the mixer bowl), you may get some spatter. And who wants excess mess to clean up?

That’s great! I’ve never though of using a food processor to shred the chicken. It takes half the time!
