Amazingly easy and delicious Pineapple Sweet Potato Rice. Healthier side dish with a taste of fall.
It’s Crazy Ingredient Challenge time! This is a favorite as usual…. two ingredients voted on and chosen to use in a new creative recipe. This month, I took those ingredients and used them in a side dish with rice. Rice can be a bit boring and although I love rice, occasionally it needs something else, don’t you agree? This sweet potato rice side dish was just the ticket.
This month’s Crazy Ingredient Challenge ingredients were Pineapple and Sweet Potatoes. My first thought was a holiday casserole to pair with the Thanksgiving turkey or Christmas ham. But, again I was looking for a unique rice dish for chicken or steak.
This challenge came at the right time. Fall. Sweet potatoes go with the fall season so much in my book. There is something comforting about it. Don’t know what, but that’s what I think.
Ok, there was no way to make the picture of the sweet potato attractive. At all. You can only work with so much.
These two ingredients made for a wonderful rice dish that is pretty simple. Just use your favorite rice (pilaf, brown, white etc) and add the chopped sweet potato and pineapple, both sauteed in a skillet while the rice cooks. Easy Peasy.
Both of these ingredients just scream “stir fry me”.
Sweet potato and pineapple really do compliment each other quite nicely, you really don’t need to add too much to it. Love the idea of using rice as the vehicle to unite the two. A great side dish.
This reminded me of pumpkin rice that we make here. We cook the rice and pumpkin together though. I need to try this stir fried version with sweet potato
