But not just any chicken, I made chicken skewers. But, I also needed a simple marinade recipe for the chicken to set in overnight. Enter Pop and Cook. I had the big August family barbecue on Sunday, this product sure came in handy. I wanted to make chicken skewers and needed a delicious marinade for the chicken to set in for a few hours or overnight. Since there was A LOT of chicken, Pop and Cook saved me time so I didn’t have to mince a whole bunch of garlic. I just popped a couple of the pods out and it was ready to go.
So how do you know how much to use? How much is each “pop” worth, serving size wise? (the package calls them “cubes”). I’ll tell ya:
Chopped Basil: 1 cube = 1 teaspoon
Chopped Cilantro: 1 cube = 1 teaspoon
Crushed Garlic: 1 cube = 1 garlic clove
Sautéed Glazed Onions: 1 tray = 3 chopped onions (since there are 10 cubes, I equate one cube for 1/3 of a medium onion )
Crushed Ginger: 1 cube = 1 teaspoon
It’s all written on the package so that makes it super easy too. I love how I can have it in my freezer and use a pop or two when the opportunity arises. It’s a new staple for my freezer and sure did come in handy this weekend. Each package has a two-year shelf life, so you can have fresh garlic, onions, and herbs year round.
The crushed garlic was perfect for this marinated chicken recipe. So convenient and so fresh!
Marinated Chicken Skewers
- 2 Pop and Cook Crushed Garlic Cubes
- 1/2 cup extra virgin olive oil
- 1/8-1/4 cup honey balsamic vinegar
- 2 green onions (sliced)
- 1 tablespoon chopped fresh parsley
- 1 tablespoon red wine vinegar
- juice of 1 lemon
- salt & pepper to taste
- 6 Large boneless, skinless chicken breasts (cut into 1)
- Veggies of choice (cut into 1 inch squares)
