Tacos, tacos, tacos! One of my favorites so when my nephew & his girlfriend hosted a taco and enchilada party last week, I was there. I was tasked with making a side dish to compliment this deliciousness so I decided on a light & fresh Mexican pasta salad that turned out close to perfect.
The party was in honor of youngest my step-brother who was in town from California with his new husband. We spent some time at the Hogle Zoo here in Salt Lake City, which was awesome since I got to watch the otters play and the lions hang out. What beautiful animals they are! And the new hubby is one awesome guy!
After the zoo trip, it was taco time! And what a spread it was! My nephew and his girlfriend made some tasty tacos and spicy enchiladas. And two types of guac. It’s obvious from the photo below they don’t speak spanish, lol! Can we say taco party? Look at all the goodies just waiting for us to enjoy!
The party had it all, and my Mexican pasta salad. With the light dressing and the fresh ingredients, this was one amazing salad.
