A perfect appetizer for any spring party, this Puff Pastry wrapped brie oozes with goodness and the cherries just add something special.  And it’s only 4 ingredients.

Spring is here!!!!  Which means outdoor parties and family gatherings. I spend so much time outside during the spring and summer months and this appetizer is just what the doctor ordered when it comes to a festive appetizer. Wrapped brie cheese topped with cherries encased with yummy Pepperidge Farm® Puff Pastry Sheets. This one will soon be a party favorite.

I don’t need many excuses to eat brie cheese. It’s so easy and it’s the perfect party appetizer. During the spring, I’d like to take my appetizer game up a notch or two.  This appetizer has FOUR ingredients. Just four; am 8 ounce wheel of brie, Pepperidge Farm® Puff Pastry Sheets, fresh pitted cherries and an egg. That’s it. Easy peasy.

Puff Pastry Sheets are a freezer staple of mine. They come frozen, ready to use so it’s just a matter of thawing for about 40 minutes and BAM… You’re ready to go! Don’t be intimated, it’s super simple to work with.

This is Mother’s Day, bridal shower and baby shower season. Puff Pastry Sheets can make any appetizer simple and easy for these occasions. And this one fit the bill.

Start by pitting the cherries. Yes, it’s a bit of work but trust me when I say that fresh cherries are the way to go here. You can purchase a cheap cherry pitter in the canning section of your store. It works great and doesn’t even make my hands hurt!

Unroll your Puff Pastry Sheet and give it a quick roll with the rolling pin. Maybe two or three times in each direction. Rough chop your cherries and place them in a circle in the center of the sheet.

Then, place the 8 ounce wheel of brie on top of the cherries. You can use a brie wedge if you wish.

Carefully wrap the Puff Pastry Sheet around the cheese wheel (not too tight, you want to allow some space) and fold into an envelope. Flip it over.

Beat the egg and brush the egg onto the top of the pastry. The egg wash brings out the golden color of the Puff Pastry Sheets even more!

Place in a greased baking sheet and bake at 400 degrees for 25-30 minutes (ovens vary, mine took 30 minutes).

Here is how it made a delicious party platter. The flaky crust of the Puff Pastry Sheets surrounding the richness of the cheese & the tartness of the cherries made an appetizer worthy of the gods. Well, at least worthy of your guests.

If you want to have some fun with it, take some of the Puff Pastry Sheets and a cookie cutter and cut a cute shape into the remaining pastry. Then top the wheel with it before you bake. You can cut a sun, flower or any other fun shape you have.
