One Skillet Caprese Chicken Spaghetti Squash

Here’s a recipe you’ll need for those busy weeknights. A caprese chicken & spaghetti squash dish that is light and hearty at the same time. Not just another chicken recipe! This caprese chicken is cooked with spaghetti squash, fresh tomatoes, basil and more. Light yet hearty dinner recipe.


 Ahh… Sunday! The day to relax and unwind. And still prep for the upcoming week. If you’re a planner like me, you like to figure things out ahead of time so you’re not rushed during the week. But, life does throw curveballs and there are days you don’t have time to make a gourmet dish. That’s where this caprese chicken comes in. It uses pre-cooked chicken and is make light with spaghetti squash.

With spring around the corner and daylight savings time in full effect, I find myself outside after work tinkering in the garden or cleaning the chicken coop. Isn’t this weather awesome? It’s still a bit chilly here in Utah, but at least it’s not the bone-chilling cold we had through the winter months. I’m so excited to get my garden started!

My sister lives in California and she planted a whole bunch of stuff over the weekend and I will admit, I was a bit jealous.  In the meantime, I can prep my soil and get ready when the temps permit.

Last weekend, I was shopping at my local Smith’s Food and they were handing out coupons for Johnsonville Flamed Grilled Chicken. This is a new product in the store and hey, I had a coupon so why not? I picked up a pack of the Garlic & Herb variety and thought it would be perfect for a weeknight meal. The pack comes with three pieces of chicken that are fully cooked and ready for salad, appetizers or to add to your recipe.

I had my spaghetti squash from Winder Farms, so this seemed like the perfect addition. Most of the time, I like to cook up my own chicken, but when you find something this easy and delicious, I’m all for it.

You probably don’t have time every night to cook your chicken breasts first, so this is so convenient. And it was perfect with my caprese chicken squash dish.  It was ready in less than 30 minutes too, which is perfect for busy weeknights.
