Hello! Sorry I have not been around this past week. You know how it gets…. life gets in the way, personal stuff crops up and all that mumbo jumbo. It’s been crazy town! When life takes you in unusual directions you don’t always have time for that complex meal. This time, I used pre-cooked sausage, peppers and couscous to make these stuffed red peppers that were tasty and ready in a flash.
I’ve made stuffed green and yellow peppers before, but stuffing the red one’s were a new adventure. I really enjoy the Aidell’s Pineapple Bacon Sausage I found at Costco and thought this would be a fine combo for dinner. Add in some tri-color couscous, and there is a stuffed red pepper that is even more colorful!
Pre-cooked sausage is a staple in my home. I buy larger quantities at Costco then divide and freeze them. When it’s just two of you in the house, it’s not always easy to buy in bulk and not waste food.
I do the same thing with fish and pork. Using a FoodSaver Vacuum Sealing System, I freeze meats and fish in pairs of two (sometimes three depending on the recipe I plan to make). Makes it really convenient to make a quick meal for two.
I had some HUGE red peppers from Winder Farms. I mean they were HUGE. This meal for two turned into a meal for four due to their size, however they sure made for great lunch leftovers for work the next day. If you’re like me, you’re a leftovers-type of lunch eater. The stuffed red peppers totally worked for me.
