I was sent three jars of Simply Sesame. I made this amazing Vanilla Pistachio Bundt Cake for the Simply Sesame Blogger Recipe Challenge. All opinions & recipe are 100% my own.
Got cake? I’m not a big dessert person, but when the right bundt cake comes along, I have to try it. And in this case, Simply Sesame made this recipe one to gobble up. Simply Sesame was holding a blogger recipe challenge and I jumped right into it. I love a good challenge and since this is a product I had not used in the past, this seemed to be the perfect recipe adventure for me. Simply Sesame sent me their three flavor varieties and I eagerly awaited their arrival.
As soon as they arrived, I popped open the jars, grabbed a spoon and tasted each one. YUM was the first word that came to mind. Cake was the second. I will admit, it was tough to decide which to use. After a few more taste tests (and wondering if I’d have enough left to even make a recipe at this point), I elected to go with the Pistachio flavor. It just seemed like the perfect one for a bundt cake.
I decided to make a bundt cake for the recipe challenge. I think bundt cakes are rather pretty with their shape, so it was a no-brainer. I love pistachios and I thought this spread would make a great addition to the cake and I could add chopped up pistachios to the cake too. And I decided to top the bundt cake with pistachios as well! I was pleasantly surprised with the amazing results too. Simply Sesame works great with cake recipes.
Simply Sesame’s creamy spreads are all nut-free. How? Because they’re made with sesame seeds instead of nuts, so good for those with nut allergies. It’s an all-natural spread with no additives or preservatives. They are also gluten-free, non-GMO, and vegan with no trans-fat or cholesterol. They come in four varieties; Vanilla & Almond, Pistachio, Pure Roasted Sesame and Sugar-Free Vanilla & Almond. You can’t beat that with a stick.
You can use a cake mix to make this if you’re short on time. If you do, just add 1 heaping tablespoon of Simply Sesame Pistachio flavor, 1 teaspoon vanilla bean paste and 1/3 cup chopped pistachios to the mix. Then, bake according to package directions. If you want to make it from scratch, follow the recipe below.
Pistachio Bundt Cake
3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 3/4 cup granulated sugar
1 1/2 stick butter, salted, room temperature
3 large eggs, room temperature
1 teaspoon vanilla bean paste
1 cup buttermilk
1 teaspoon Simply Sesame Pistachio paste
1/3 cup chopped pistachios
Pre-heat your oven to 350 degrees.
In a large mixing bowl, whisk together the flour, baking powder, and baking soda. Set aside.
In a large mixing bowl of your stand mixer, beat together sugar and butter on low to medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the vanilla bean paste and mix.
With the mixer on low speed, add the dry ingredients and buttermilk by alternating until just blended. Increase the speed to medium and beat for 2 minutes. Add the Simply Sesame paste and pistachios and mix on low until just incorporated.
Pour into a well greased bundt pan. Place pan on a cookie sheet and bake in the oven on the middle rack for 45-50 minutes. Insert a toothpick (or a wooden skewer like I did) to make sure it’s done. If it comes out clean, it’s done.
For the glaze all you need to mix together is 1 cup powdered sugar, 3 tablespoons of water and 1 Tablespoon of Simply Sesame Pistachio paste. Add some green food coloring to give it some color then drizzle it over the cake. Add some chopped pistachios on top and you have an amazing dessert.
