I know it’s been rather quiet around here the last couple of weeks. Hubs and I have been traveling and he had a short stint in the hospital as well. It turned a busy time of year into a busier time! I hope you had a wonderful holiday and an amazing new year celebration. 2017 promises to be a super year with endlesspossibilities! Like this lemon shrimp zoodle recipe that will start your New Years off the right way.
A lot of us make New Years resolutions, however I changed my way of thinking a couple of years ago. As I mentioned Tuesday, I go with a “word of the year” and work to achieve that in most aspects of my life. For 2015, my word was “growth.” I wanted to grow my blog, learn more on my day job and grow in other areas of my life such as my spiritual side and my hobbies.
This year, my word is “courage.” I want to do more to step outside my comfort zone, not just here with my cooking, but also stretch myself at my day job, try a new hobby, maybe even a sport (low impact, I’m old after all). Today, I bring you a delicious (and easy) one-pot shrimp dish that you can easily whip up after work or on any busy weeknight.
Shrimp is so easy to make. It’s one of the fastest proteins to cook in my book and however you season it, it turns out pretty darn good. Rather then noodles, I used zucchini “zoodles” in this recipe to lighten it up for the new year. Add to it some seasoning and you have a lemon shrimp dinner that’s healthy and will help you stick to your New Years Plans.
I received a spiralizer a bit over a year ago and find it to be a great way to incorporate veggies into my traditional pasta style dishes. Zucchini makes this a lighter dish then standard pasta. One tip: cut your zucchini in 3 chunks before spiralizing otherwise you will have mile long zoodles. You really don’t want that.
