Super easy Skillet Eggs with Tomatoes, White Beans & Fresh Spinach. This savory breakfast dish is perfect for those chilly winter mornings.
Do you ever get the breakfast blues? You know, when you want something more than just bacon & eggs or a yogurt? Last year, I did a review for Sun Basket and they included a delcious breakfast recipe that was super easy and healthy. Of course I lost the recipe card and only have a picture to go by from that post, so I can’t make it exactly. What I did do was make for you a healthy and nutritioius skillet eggs recipe that came pretty darn close to Sun Basket’s recipe. But I think I like this one better. Eggs… we have tons of eggs right now. OK, maybe not TONS. As of January 1st, our nine chickens have been laying eggs daily and we have over 20 so far this year! I told Hubby it seems as though they had a calendar in their coop and knew it was January 1st. It’s like they made a New Years resolution to produce more eggs.
The Chickens have been dormant since mid-November, which is normal since chickens can slow way down during the cold winter months. I’m grateful for all the colorful eggs they have given us over the past nine days, but I need recipes!
So I reverted back to Sun Basket’s egg recipe I did a year ago. I tore my cookbook cupboard apart looking for the recipe card and finally just gave up and studied the picture from last year trying to remember how it was made. I remember tomatoes and white beans and a bit of pesto but that was about it. Don’t you just hate that when you lose a good recipe card? I used what I remembered as a foundation for this recipe and added some other items I had in the fridge. This turned out A-MAY-ZING and there was extra tomato mix which I ate for lunch today. YUM!
This was made using one skillet. One. I know you hate clean up as much as I do, so this one minimizes that which means less dishes to do. One thing to note; I use platinum cookware which cooks a lot hotter on lower heat than most traditional cookware. In the recipe, I included the settings for both so whether you have platinum or another brand, you will have the correct heat setting and time.
