Welcome everybody to the December edition of the Crazy Ingredient Challenge!
I love this challenge. We have two polls to pick from and each poll has four ingredients to pick from. The winner of each poll becomes the crazy ingredients for the month. These were the winners for December; Nutmeg and Rice.
Say whaaat? Nutmeg and rice was a good holiday time challenge since nutmeg seems to be everywhere this season. And you can never really go wrong with rice. I use it as a side dish often since it’s so easy to make.
It has been freakin’ cold lately and weather in Utah will just get colder. I love casseroles during this time of the year not only because they are so comforting, but they re-heat to make some pretty good leftovers for work the next day.

This was a good combination of ingredients, especially this time of year. Nutmeg is a strong spice for me so a little goes a long way as far as I’m concerned. If you love the spice, double it in the recipe to give the ground turkey more flavor. Also, you can use just about any rice in this recipe. I chose basmati rice since I find it holds well in baked dishes like this one. Another thing I like to do is brown some chopped spaghetti like in a certain boxed rice mix, but that is not mandatory.
