Ever have those days when you are STARVING but you got home late from work? Happens to me. All. The. Time. This is a go-to meal for our household since it’s quick, easy and absolutely delicious. Sausage and Peppers get a colorful update by using three different varieties of bell peppers. And they make great lunch leftovers too. Read on…..


I love how quickly this one came together when I got home late. I work a full time job and right now we have auditors in. That means 10-15 EXTRA people walking around and asking all sorts of questions, interrupting my day and pushing me further and further behind. UGH! Frustrating and the last thing I want to do is go home and whip up a gourmet meal, right?

This one is made super easy by using pre-cooked sausage you find at the store in the deli area. I chose Jack Link’s Bratwurst for this recipe. I didn’t want anything too spicy but I also didn’t want a sausage that lacked flavor. Jack Link’s makes some of the best pre-cooked sausage you can find which is another reason I chose it. There are others on the market, so when you make this, just pick your favorite.

In the pictures you will see some stray mushrooms. The recipe doesn’t call for it, but I had two, yes, just two mushrooms in my fridge so I sliced them up and added them to the pan. After all, what was I going to do with just two mushrooms?
