Football and family. Boy does that go together in my family. We’re all about football from pre-season to the big game. We not only have a season long contest picking the winners and losers each week, but we also have a Family Fantasy Football league. The ultimate prize? The coveted trophy. I plan to win that this year. Just try to stop me. With the friendly competition that goes on, we get together often on football Sunday’s to watch our favorite teams and of course eat. What better snack to serve then these TRISCUIT Caprese Bites. It pairs perfectly with game day parties.
My family really connects over football like nothing else. Even though we all cheer for different teams, we find watching football a good bonding experience. Like I said, we have a family fantasy football league so we enjoy the games and also a little competition too.
I scored big with Coca-Cola and TRISCUIT as part of my perfect game day party lineup. And it fits in beautfully with my plans. I like to make a variety of appetizers for my game day parties so everyone can have a little of everything and enjoy all the flavors. This time, I went Italian style with Caprese Party Bites. One of my favorite things to eat is caprese style anything, from salad to a main dish. This time, TRISCUIT was going to make it easy and make each bite crunchy perfect.
But before I could get started to make my fresh delicious appetizer, I needed to go to the store and y’all know how much I like to grocery shop. That’s no lie, I really do. I headed on over to my local Smith’s Marketplace (Kroger banner store) that that was recently built by my house (yay) for a box or two of TRISCUIT crackers and some refreshing Coca-Cola. The TRISCUIT crackers can be found in the premium cracker aisle and Coca-Cola in the beverage section.

This recipe is super simple and uses just a few fresh ingredients to compliment your TRISCUIT snack. It’s a twist on my sisters tomato dish she serves during the holidays and I found it to be a fun snack to have with my family as we watch the games together. And wash it down with a delicious Coca-Cola. You can’t beat that.
Again this recipe is easy. This feeds 3-4 football fans a nice appetizer. The way I figure, 3-4 Caprese Bites per person is a good amount. First, take a half cup of cherry tomatoes, rinse them off and cut them in half lengthwise. Cutting them like this makes them look like little footballs. Place the tomatoes in a bowl and add 1 Tablespoon each extra virgin olive oil and balsamic vinegar. Let them chill in the fridge for an hour to really infuse the flavors.
Next, lay out a dozen TRISCUIT crackers on a platter. Cut 12 slices of fresh mozzarella and place a piece on top of each cracker.
Take about a 1/2 teaspoon of pesto sauce and spread it on top of the cheese. Repeat with all 12 pieces. Place two tomato halves, skin side up, on each cracker. Serve immediately.
