I think this one can also be taken outside and cooked on the grill. Just tie it up well with cooking twine so nothing falls out.
Couscous Stuffed Chicken Breast
- 3/4 cups water
- 1/2 cup toasted pine nut couscous
- 1/2 cup chopped kale
- 1 tablespoon chopped fresh basil
- 1 Medium green onion (sliced)
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic (minced)
- 2 Medium boneless skinless chicken breasts
Instead of using pine nuts as Sarah’s original couscous stuffed chicken called for, I found Toasted Pine Nut Couscous by Near East. Pine nuts can be a bit pricy so I though I’d try this instead. It was actually very tasty. I also added kale since my garden has so much right now. And, kale is good for you too.
