Happy Happy Monday to you! Today is the Group A reveal day for The Secret Recipe Club. I’m loving this club and have met so many fun, creative food bloggers. This has to be one of my favorite Monday’s since we all reveal our recipes at once. This month I took the recipe outdoors and grilled it on our new grill. It’s a Couscous Stuffed Chicken you’ll want to make again and again.
If you’re unfamiliar with the Secret Recipe Club here is a brief description. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe to make and creates a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. And since there are four groups, each Monday of the month is a new “reveal day.”
This month, my assigned blog was Things I Make (For Dinner). Sarah is a married lady in her 40’s who loves to find new recipes to make for herself and her husband. She enjoys cooking, traveling and napping, all with her husband. Ok, I love those things too! Her blog is full of great recipes; some classic, some adventurous. Lots of great stuff!
I explored her recipes and had decided to make her Spinach Stuffed Flank Steak. Then, this past week, I was diagnosed with Gastritis. I won’t go into the details, but I have to do a major diet shift over the next month to heal up. So I bookmarked that one for another day and went back to search for a chicken recipe.
She has lots of chicken recipes to choose from. I was completely intrigued by the Oh, for F*ck’s Sake, Buy My House Pasta. How can you not be with such a catchy title? And the Cheesy Chicken & Rice Bake caught my eye as well. However, I finally decided on the Chicken Breasts Stuffed with Herbed Couscous. I had most of the ingredients already in the pantry/fridge and sounded perfect.
