A refreshing peach mango salsa perfect for summer entertaining

Hello and Happy Wednesday! It’s time once again for the Crazy Ingredient Challenge. I just love this challenge because it makes me “think outside the cookbook” and come up with something awesome from two unique ingredients that are not traditionally found in the same recipe. And I was so very excited for the two ingredients this month. Are you sitting down? …….. it’s Corn and Peaches!!

I knew almost immediately what I was going to do. I love a good fruity salsa since it’s so light and refreshing. This one is good on shrimp tacos or over salmon. Or just with chips.
This recipe was inspired by three of my favorites here; Peach Mango Sorbet, Black Bean and Corn Salsa and a Mango Avocado Salad. They are three summer recipes I make each year so they inspired me to come up with this refreshing salsa. One thing to note when it comes to this salsa. There is a lot of chopping. Mangoes, peaches, onion, avocado… they all need to be chopped. I have arthritis in my hands to I turned to my trusty KitchenAid Food Processor Attachment for my mixer. They have a chopping blade that does all the hard work for you. This left my hands pain free and made all the chunks the same uniform size. If you don’t have the food processor attachment, I highly recommend purchasing one.
