Onion & Mizithra Cheese Bread
- 1 Large yellow onion (finely chopped)
- 1/2 teaspoon salt
- 2 cloves garlic (crushed)
- 2 1/2 cups all purpose flour
- 2 teaspoons baking flour
- 2 Large eggs
- 3/4 cups milk
- 2/3 cups olive oil
- 1/4 cup grated mizithra cheese
|Preheat the oven to 350˚Fry the onions and the garlic in a medium skillet on medium heat. Cook until the onions are transparent, then remove from heat. |
|In a large bowl, combine the flour, baking powder and salt. In a separate bowl, whisk together the eggs, milk and olive oil. Slowly add the wet ingredients to the dry, mixing until fully incorporated. |
|Carefully fold in the onion and cheese. Pour the batter into a lightly sprayed loaf pan. Bake for around 35 minutes, or until a toothpick inserted comes out clean |
Usually I make a change or two to a recipe. Not this time. It was perfection! I loved every single bite of this one. You will too.
