Well, the water heater is fixed! I mentioned Tuesday that the gas control valve went out and after two days of…. uh… “invigorating” showers, we have hot water again. Let’s hope this doesn’t happen again. But what I do want to have happen again is this Copycat KFC Slaw. I scoured Pinterest and googled KFC slaw for days. There are a lot of copycat recipes out there and this one was everywhere. So I made it. The verdict? It’s just like KFC’s!!!
KFC Slaw has been a favorite of mine for-ev-er! I’m a big fan of their biscuits and mashed potatoes too. And the chicken. Extra crispy for me. Can’t go wrong with KFC. And this week, I had all ingredients on hand to make it.
I belong to the Community Supported Agriculture Farm Basket Program from Petersen Family Farm just south of Salt Lake. It’s a great way to support a local farmer and pick up some fresh veggies and fruit each week. This past week, part of my basket was one giant head of cabbage. I used half of it for this recipe (or use a whole medium sized one) and added lots of carrots since I love them.
I shredded the cabbage and the carrots using my countertop KitchenAid Food Processor. I have the one that attaches to the mixer too and I use the in different ways. The food processor shredded my cabbage and carrots in no time making this recipe very easy.
