“Cheeseburger in Paradise…” Y’all know the classic Jimmy Buffet song? I sure do since I’ve been a Parrothead for eons. Parrotheads are what Buffet fans are called and I proudly proclaim I am one. The song I mentioned was the inspiration for this stuffed meatloaf. It’s got all the fixings stuffed right inside for a cheeseburger taste without the bun.
I’ve seen Jimmy Buffet in concert countless times all over northern California when I lived there. I know most songs by heart and even have his channel programmed into my Sirius XM radio. There is something so positive and happy about his music that you just can’t help but to smile and sing along.
“Cheeseburger is paradise.
Heaven on earth with an onion slice.
Not too particular, not too precise.
I’m just a cheeseburger in paradise.”
That’s the main chorus of the song. Yep, it’s heaven on earth with an onion slice! Well, this meatloaf is worthy of the song and is amazing. My mom made meatloaf while I was growing up and it was one of my favorites. I started with her recipe and gave it a twist by adding Moores Original Marinade to the meat mix, which gave it a nice bold flavor. And it was stuffed with all the cheeseburger staples. Plus bacon. Gotta have bacon.
Also, one other thing when it comes to meatloaf. Use a quality ground beef that still has some fat. I used a ground angus beef that was 85% lean. The extra 15% of fat gives it the moisture and flavor the meatloaf needs.
