Swiss & Sausage Corn Griddle Cakes

- 3 tablespoons olive oil (divided)
- 1 Bacon Pineapple sausage link (or other variety, chopped small)
- 1/3 cup chopped green onion
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cups 1% milk
- 1 Large egg (beaten)
- 1/2 cup canned corn (drained)
- 1/2 cup shredded swiss cheese
- butter and/or syrup to top
- 1/2 cup chopped spinach
Add jalapeño for some kick
This recipe makes four good sized thick griddle cakes or you can make a bunch of smaller ones. It was savory goodness that kept me going during our zoo adventure. And, I got to use a bunch of leftovers that would otherwise have gone to waste. Our day was perfect and it was capped off by a beautiful sunset over the city. This is an amazing view from my nephew & his girlfriends place.
