Welcome everybody to the April edition of the Crazy Ingredient Challenge!
I just love this challenge because it makes me “think outside the cookbook” and come up with something awesome from two unique ingredients that are not traditionally found in the same recipe. And I was so very excited for the two ingredients this month. Hold on to your hats folks… it’s Lemon and Thyme!!
I love lemon so these ingredients were perfect for me! I actually had lots of ideas from muffins to a breakfast stuffed french toast. I think these two ingredients were made for each other. Not too terribly crazy this month, but every once in a while an easier pair of ingredients is nice.
So I set out to make a light dinner for two. I had some salmon filets at the ready and decided a grilled salmon with a side of mushroom angel hair pasta was in order. I would also pair this dish with a tossed salad instead of the pasta for a light lunch.
This looks amazing!! Salmon is one of my favorites, so I’ll be definitely keeping this recipe on hand.

Thyme and lemon are perfect with fish, especially salmon! I wonder if I have any salmon in the freezer….
