Deviled Egg Bites
- 12 Large eggs (whites & yolks separated)
- ground black pepper to taste
- 1 cup mayonnaise
- 1/2 cup honey mustard
- 1 teaspoon smoked hot paprika
- RO*Tel tomatoes and olives to garnish
As I said in the recipe, I used a generous amount of black pepper in my egg white bake. It gave the base a speckled look. If that doesn’t work for you, eliminate that step from the recipe and maybe use the pepper in the yolk mix. Or not. That’s up to you.
Hubby loved these deviled eggs. It was hard to keep him from gobbling them up, but he resisted. And so will you. The creamy yolk and the spice of the RO*TEL tomato I put on top of each will have your reaching for seconds. Or thirds.
