It’s almost here… one of my favorite food holidays, Cinco de Mayo. Ok, maybe it’s not a food holiday, but it’s a great reason for me to eat Mexican food. All. Day. Long. Mexican cuisine is one of my favorites so in honor of the upcoming event, I made a Cheesy Rice Bake that pairs perfectly with enchiladas or any of your favorite Mexican dishes.
Love this holiday so much I volunteered to be on my work’s Cinco de Mayo party committee. We do this each year and it’s quite a good time. This year, we’re thinking about taking the crew outside and busting open a piñata. Of course along with the fun activities, there will be food. Lots of food.
For those of you history buffs, the holiday of Cinco De Mayo, The 5th Of May, commemorates the victory of the Mexican militia over the French army at The Battle Of Puebla in 1862. Good information, right? I do like to know a little of the history behind a holiday.
Now, let’s get cooking! This cheesy rice bake recipe serves a party, but you can cut it in halves or fourths depending on how many you’re serving. However if you’re heading for a Cinco de Mayo potluck, this is a simple recipe to make that the whole crowd would enjoy.
