Today is the Group A reveal day for The Secret Recipe Club. I love this club since I get to learn all about a new blog and discover delicious recipes. This has to be one of my favorite Monday’s since we all reveal our recipes at once. This month I was assigned a blog that had so many options that I really had a hard time. However, these stuffed orange peppers were incredible! Read on to hear about this deliciousness.
If you’re unfamiliar with the Secret Recipe Club here is a brief description. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe to make and creates a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. And since there are four groups, each Monday of the month is a new “reveal day.”
My assignment this month was Daily Dish Recipes. Nicole is a mom to five teens, a pseudo mom to more and has a zoo just like me; cats, dogs and a hedgehog. Like me, she grows her own veggies and herbs. I love that since it means you have all the fresh ingredients right at your fingertips. I don’t know how she has time to whip up the mouthwatering recipes on her site, but she does and she has some amazing dishes to try.
Once you dig into her recipes, there is no going back. There were so many delicious recipes it was so hard to pick just one for this post. And, her recipes are suited to my tastes and have some of my all time favorite foods. Since I love green beans, the Gouda, Bacon & Portabella Mushroom Green Bean Casserole immediately caught my eye. The Salmon Croquettes look amazing too. And the Avocado, Brie & Mushroom Omelette is definitely going on my breakfast plate one of these days.
I finally decided to make her Shrimp Scampi & Rice Stuffed Roasted Peppers. I read the recipe and knew immediately this was the one. I had almost everything on hand already so I was ready to dive right in.

Those look really good! Riffing on the pepper theme, I would be tempted to use yellow, orange and red peppers, so there was even extra color. Wouldn’t that be fun? Great SRC pick!
