It’s the March edition of the Crazy Ingredient Challenge!
I just love this challenge because it makes me “think outside the cookbook” and come up with something awesome from two unique ingredients that are not traditionally found in the same recipe. And I was so very excited for the two ingredients this month. Hold on to your hats folks… it’s Heavy Cream & Tomatoes!!
You read that right…. these are two crazy ingredients!! My first thought was a creamy tomato soup since that is one of my all time favorite soups that Mom used to make. I decided not to make a soup since I already have a Tomato Florentine recipe here that I made for another Crazy Ingredient Challenge.
So what’s a girl to do? Hubby helped me with that. He wanted some potato au gratin. for dinner and he got them. With the addition of tomatoes. So my Crazy Ingredient Challenge dilemma was solved.
LOVE THIS! I hope I get lots of tomatoes in my garden this year because I definitely want to make this one.

Such a great idea! I never would have thought of adding tomatoes with potatoes in a dish like this. I know my in-laws would love this. They are obsessed with tomatoes.
