Parmesan Fiesta Corn
- 2 tablespoons butter (melted)
- 1 teaspoon Mrs. Dash Fiesta Lime Seasoning
- 1/2 teaspoon Mrs. Dash Garlic & Herb Seasoning
- 2 Large ears of corn (shucked)
- 1/4 cup red wine
- 2 tablespoons grated parmesan cheese
- parsley to garnish
|In a bowl, mix the butter, and two seasonings.|
|Heat a skillet over medium heat. Brush the two ears of corn with the seasoning mix. Place in the skillet. Add the wine.|
|Cover and cook over low heat for 20 minutes. Remove from pan and sprinkle parmesan cheese and parsley over the corn. Serve immediately.|
That is one delicious ear of fiesta corn! I used the wine to cook it in since it gives a nice flavor to the corn. And the alcohol cooks out of it if that is a concern of yours. I just love this recipe!
