Corn on the cob. I crave it. Always. We probably eat it every night when in season and it’s sweet goodness is something I want all. the. time. It’s hard to find during the winter and occasionally I’ll pick up an ear or two (or more) at Costco or Harmon’s. I scored recently at Costco and came up with this wonderfully seasoned corn recipe that I’ll be making again and again.
I was a huge fan of corn even as a kid. We would have it often in the summer months and with just a little salt, pepper and butter, it was perfect. Now that I’m older and love to experiment, I have found that many different seasonings really enhance the sweet flavor of corn. My favorite seasoning these days is Mrs. Dash Fiesta Lime. It’s not spicy hot, but it has a bold smokey flavor that I put on everything. With the hint of lime, it’s perfect for fish, veggies and corn.
This recipe combines Fiesta Lime with another Mrs. Dash favorite, the Garlic and Herb seasoning to make this corn spectacular. It’s all made stove top with no water, just lots of flavor.
