This recipe is super simple. Add 1 cup of oatmeal to 1 1/2 cups boiling water. Stir in the spinach and cover for 5 minutes over medium low heat.
While the oatmeal cooks, heat a skillet over medium heat and add the egg. Cook 2-3 minutes per side for over easy eggs. Once the oatmeal is done, divide in half and pour into two bowls. Top each with chopped cherry tomatoes, drizzle with balsamic vinegar and top each with an egg. Voila! Breakfast salad. If you love avocado, add that too!
