Nothing starts the day out right than a good breakfast. After all, it’s the most important meal of the day. On Valentines Day, hubby and I were venturing out to Farmington Bay to check out the bald eagles and we needed something to sustain us for the afternoon. Enter Quaker® Oats, some fresh produce and an egg. Voila, breakfast salad!
Hubby and I have seen the bald eagles up north almost every Valentines day. I love checking out these beautiful birds and admire just how majestic they are. One year, there were a bunch of them on the frozen lake and I counted 21 within my view!! It’s just amazing.
Being that the temp would top out at a balmy 40 degrees that day, we needed a breakfast to keep us going. That’s where Quaker® Oats comes in. One of my favorite winter breakfasts is a hot bowl of oatmeal. I like to take mine to a new level and add fresh produce to really round it out. This bowl of breakfast salad deliciousness is my entry into Quaker® Oat’s “Bring Your Best Bowl” sweepstakes.

Hearing about the contest, I ran down to my Kroger store and grabbed me a canister of Quaker® Oats. It’s right there in the cereal aisle with the other hot cereal items. Then to the produce section to get my fresh ingredients and I was ready for an eagle viewing breakfast salad. The combination of the hot oatmeal, spinach & tomatoes made this a real winner.
I’m not sure if you have a lot of eagles in your neck of the woods, but every year they come through Utah and spend some time at the Farmington Bay Waterfowl Management Area. It’s about an hours drive from our home but it’s well worth the trip.
It was a cold grey day with the inversion of smog in our area so no sunshine today. It took us almost an hour to see a bald eagle since they were so far on the other side of the pond we needed the spotting scope to even see them. But there they were…. in all, we probably saw 10-12 bald eagles and 2-3 golden eagles, including this one posing in a tree for us.
And there was this cute bird who looked like he was also posing for us. I have no idea what kind of bird it is, but he was quite adorable and colorful. If you know what kind of bird this is, please leave me a comment. I can’t figure it out.
