Delicious baked Eggplant Involtini – A lighter version of lasagna roll ups.

Welcome to the Group A reveal day for The Secret Recipe Club.  I love this club since I get to learn all about a new blog and discover delicious recipes. This has to be one of my favorite Monday’s since we all reveal our recipes at once. This month I found another way to cook eggplant from Adventures in All Things Food blog.

If you’re unfamiliar with the Secret Recipe Club here is a brief description. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe to make and creates a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose.  And since there are four groups, each Monday of the month is a new “reveal day.”

My assignment this month was Adventures in All Things Food. You put food and adventure in the same sentence and I’m immediatley intrigued. Andrea is the chef behind this blog and boy is she a busy person! With three kids under 6 years old, I’m sure she goes 100 MPH daily. She lives on her family farm in Oregon and that also keeps her quite busy. She shares recipes, farm life and must read books.

As I browsed through her recipes, I found many that sounded mouthwatering good. I always love an enchilada so her Sour Cream Chicken Enchilada recipe got my attention. And anything titled Twisted Fried Rice deserved a look. Ultimately I chose to make her Eggplant (Roll Ups) Involtini since I’m always on the hunt for another way to cook eggplant.

Now let me tell you, this isn’t a quick meal and there are lots of ingredients. I’m always up for that and I will say, the time and effort paid off. This was incredible!

    I love eggplant and this recipe not only has eggplant, but is vegetarian and gluten free friendly. I think I need to make this the next time I get to the ‘big’ city and pick up some eggplant. It would be a great Tapas night dish as well.

    Great choice for a Secret Recipe Club selection. I love eggplant too and I’m always on the lookout for a new way to make it. This version of involtini looks fabulous – and I love what you did with the original recipe.
