Orzo Crust Pizza

Ingredients

  • 1/2 cup orzo
  • 1 1/4 cup low sodium chicken broth
  • 1 Large egg
  • 1/4 cup shredded mozzarella cheese
  • 1/4 teaspoon Italian seasoning
  • cooking spray
  • 8oz tomato sauce
  • 2 Large clove garlic
  • 1/2 Medium onion (diced)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4oz salami
  • 1/4 cup diced ham
  • 2 heaped tablespoons sliced black olives
  • 1/2 Medium red bell pepper (diced)
  • 1/4 cup shredded mozzarella
  • 1/4 cup shredded parmesan
  • sliced green onion for garnish

Directions

Step 1
Pre-heat the oven to 400. Add the orzo to the chicken broth and cook for 15 minutes or until water is absorbed. Rinse with cold water and allow to drain well.
Step 2
In a medium bowl, mix the egg and the 1/4 cup of mozzarella cheese. Add the Italian seasoning. Add in the cooled orzo and stir until well blended.
Step 3
Lay a piece of foil on a large cookie sheet. Spray well with cooking spray. Spread out the orzo mix onto the cookie sheet in a rectangle shape. Bake for 10 minutes in the pre-heated oven.

Step 5
Remove crust from oven and spread the tomato sauce evenly on top, leaving a little edge. Layer the salami slices on top then add ham to one half an olives to the other. Sprinkle with the diced red pepper.

All I can say is this was a major yum! Both hubby and I loved this. Keep in mind, it won’t be a traditional crispy crust. This was a knife and fork pizza, but it took nothing away from the flavor . Hubby had never eaten salami on a pizza so this part was even newer to him then the non-dough crust. I really liked this and will make it again.

What an intriguing idea. I’d love to try it, maybe just for myself since my other half only likes the traditional type of pizza. Great choice.
