Sweet Potato & Red Bean Burger with Roasted Jalapeño
- 2 Medium fresh jalapenos
- 1 Large sweet potato (cooked, cooled and skin removed)
- 1/2 teaspoon southwest seasoning (I like Two Snooty Chefs Southwest Sedona)
- 1 14-oz can red beans (rinsed and drained)
- 1 Large egg
- 1 Medium shallot (chopped)
- 1 teaspoon minced onion
- 1 teaspoon garlic paste
- 1/2 cup bread crumbs or panko (plus more for coating)
- 1 tablespoon olive oil
- sliced avocado
- spring mix lettuce
- 4 Slices muenster cheese
- 4 kaiser rolls
These burgers were a challenge for sure. Not just the ingredients involved, but also getting them to firm up. When I first added the sweet potato to the bean mix and egg, it was way too loose. I kept adding some breadcrumbs until it firmed up a bit and it would form into a real patty. I still had to be careful to keep them from falling apart in the pan. This one was delicious, but I still need to work on this recipe a bit to get the firmness I want in my burger.
