Welcome everybody to the November edition of the Crazy Ingredient Challenge! This has to be one of my favorite posts to write each month because it makes me “think outside the cookbook” and come up with something awesome from two unique ingredients that are not traditionally found in the same recipe. Our past challenges have been super fun to do and this one was no different.

With the holidays approaching the group cast their votes and the ingredients were revealed: Sweet Potatoes and Jalapeños. I think I was salivating just seconds after I read that.

Have you ever made something with these two ingredients? I wasn’t sure what I would do at first since this was a “crazy” combo. My first thought was appetizers, say like a sweet potato skin topped with jalapeños but then again, I wanted my jalapeños more “involved” in it if that makes sense.

After much thought, I decided on a burger. I really loved the Carrot & Chickpea Burger I made awhile back and thought I could give the recipe a little twist with these ingredients. Besides, who doesn’t like a vegetarian burger now and again?

I will say this is not a quick & easy weeknight meal unless you cook the sweet potatoes the night before. They take about an hour in the oven at 400 or you can do stove top in Platinum like I did, which takes less time however you need to chop your potatoes in 4ths or 8ths to do so. I didn’t and it took forever! Lesson learned…. plan ahead.

    Wow, can’t believe we both went the burger route, and while similar they’re still different. I’ll have to give yours a try! And to make it an easy weeknight dinner, you can microwave the potatoes. 🙂

      Very true, you can microwave them. I like to cut and season them in the skillet or oven. I know it’s more work…. :-). Loved your recipe!

    I like that you used red beans instead of black and that you roasted the jalapenos. I love roasted peppers.

    I love your twist on the veggie burger. I automatically think black beans, but I am sure the red beans/sweet potato combo is great.
