Stove Top Veggie Cake with Betty Crocker #WinCoCheer #ad

What does holiday baking mean to you? For me, it’s all about the warm kitchen, sweet smells and hanging out with family. My grandma would make a delicious prune cake for special occasions like holidays and I remember it so well. If she can make a prune cake I devoured as a child, then I can make a veggie cake too! I started with Betty Crocker’s cake mix from WinCo and went from there.


I was recently taught how to make this veggie cake by the folks who sold me my platinum cookware. I’m so surprised how easy it is and I have a secret… there are veggies in the cake. Shhhh…. don’t tell the kids. If they notice the green and orange color, just tell them they’re sprinkles. This cake is made with a half box of Betty Crocker Super Moist White cake from Winco (and it was only $0.88 per box!), 2 large eggs, half a zucchini (shredded) and half a carrot (shredded).

Betty Crocker Super Moist White Cake was my base for my stove top cake….wait…. what did she say? Stove top cake????  Yes, I made mine on the stovetop. It is certainly easy to do and besides, the oven gets quite busy on Thanksgiving and Christmas so stovetop it is!

I used my 3 quart pot for this and gave it a spritz of cooking spray. After that, I poured in a can of cherry pie filling. You can actually use any canned fruit, like apple pie filling, but I wanted cherries since it was red and is holiday festive. Plus it’s my favorite.

Then mix everything else in a bowl and pour it over the cherries. Turn the pot on medium heat and when the gauge says 60, turn it to low and cook for 15 minutes. When it’s done, give it a few minutes to cool, then turn the pot upside down on a cake plate and it will pop right out. If you’re using a regular oven, mix the  same ingredients and put it in the oven for the required time.  Then cut it or frost it or just grab a fork and start eating.

What resulted was a festive cake with a delicious cherry topping that I couldn’t get enough of. The cake was super moist as the box says and was perfect for a holiday dessert.
